It is a kind of natural edible pigment extracted from purple
cabbage, whose byname is red cabbage.
The pigment is a compound of
several anthocyanins, flavones and tannins.
It is easy soluble in
water and solution of water and alcohol, but insoluble in oil and
absolute alcohol.
The hue and stability : The hue is influenced by PH value of solution.
In acidic condition it shows stable red or purple red; in neutral condition it shows blue; in alkaline condition it shows unstable green.
